- 8 Ripe but firm bosc pears, peeled
- Poaching Liquid:
- 4 Cups organic pomegranate juice
- 6 Cups organic grape juice
- Zest and juice from 4 organic Clementine oranges
- 4T Fresh chopped ginger
- 6 Star anise
- 6 Black cardamom pods
- Four sticks of Cinnamon
- Orange Cashew Cream:
- 2 Cups raw cashews, soaked in water for an hour
- 1 Cup organic Clementine orange juice
- 1T Honey
- 1T Water
- Garnish:
- 2 organic oranges
- 8 cinnamon sticks
- 8 mint sprigs
- Poaching Liquid:
- Combine poaching liquid ingredients in a large enough pot. Bring to a boil, then reduce heat and simmer,covered for 20 minutes. Gently place pears in poaching liquid and simmer on low for one hour, partially covered, turning the pears every couple of minutes to make sure they absorb the color evenly. The pears should just be tender (test with skewer). Remove from poaching liquid and let cool.
- Orange Cashew Cream:
- Place drained cashews, orange juice, honey and water in a blender until completely smooth.
- Garnish:
- With a pairing knife cut both ends off the orange. Carefully slice downward making sure to follow the curve of the fruit to remove the rind and white layer. Working over a bowl carefully cut each segment from the fruit letting it fall into the bowl.
Chic Tip:
For chicer presentation when serving, serve in glass serving cups and fill with orange cashew cream and place pear on top standing up. Place cinnamon stick, mint, and supremes in cups as garnish.
